This is the time of year to enjoy fresh tomatoes. They are overflowing in gardens, farmers markets, and CSA boxes, and if you have run out of ideas for what to do with all of them, then check out some recommendations from these local food bloggers.
First, from Zach and Clay at The Bitten Word, a beautiful tomato cobbler a la Martha Stewart. Fresh cherry tomatoes are tossed with caramelized onions, garlic, pepper flakes, and olive oil, then topped with Gruyere cream biscuits and baked. Not for everyday eating or the calorie conscious, but a gorgeous dish for a special meal.
And then from Cathy Barrow, aka Mrs. Wheelbarrow, a plethora of ideas for preserving tomatoes, including vegetable juice, tomato soup, tomato past, tomato jam, and roasted tomatoes. If you haven’t tried making tomato jam or roasting tomatoes, I highly recommend it. The flavor payoff is high compared to the small amount of work required.
